LE---AP Day

Today was pretty typical for a Wednesday even though it's Leap Day. Are you supposed to do something special on Leap Day??

School. Preschool. Laundry. Blah. Blah. Blah.

I heard on the news this morning that it takes the world 365 days to orbit the sun plus 6 hours. Thus, the reason for Leap Day. Logical I know, but I had never heard it broken down before.

So, I went running today. I can only seem to make it a mile before my left knee starts hurting and I'm suppose to run a 5k in April. Uh oh. I also did a pullup. Yep, one amazing pullup. At one time in my life (Jr High) I could do something like 5. Haha!

This is my last week at work here! We are so thrilled! Trust me, the life of a working momma is not for the birds. Heck, the life of any momma is not for the birds. It's going to be so awesome (and weird) staying home. I've either been a student or working for 5 years now. I think I'll sleep for the first 2 weeks.

Three of my little chicks are currently dancing around in their swimsuits, using straws as wands, and jumping from the couches into the "ocean" of our shag rug. We can't wait for Florida! We need it.

I'm racking my head for birthday ideas for Easy. He'll be 32 this month. 32! I'm thinking I'll just plan a day together for us to just...be us.


Dinner tonight is grilled salmon, a green salad, and fresh breadsticks.


Happy Leap Day! Hope your was/is as normal as mine. Unless of course it's your birthday, which of course, is pretty freaking rad.

My Mae

Every so often I'll take a picture of one of my daughters and it seems that you can see right through them to what they will someday be. It is magical to me and yeah, a little bit scary.

Someday my fiesty, emotional, curious, and silly MaeMae will turn into a confident, beautiful, and ambitious woman. I'll hate that day, but I look forward to it eagerly. Such is the life of a mother.

Her and I often don't see eye to eye.

She can be both sneaky and demanding, yet extremely passionate and agreeable. She loves us with her whole being, literally, as I have to remind her before every hug and kiss to be gentle and not squeeze so tight.

At the end of the day, after the arguing and defiance has subsided my feisty little girl always wants nothing more than for me to hold her, give her Eskimo kisses, and talk to her in whispers. I keep these little moments tucked in my pocket as they make every time out, screaming fit, and all the back-talking so absolutly worth it.




Her hair: I wet one chunk at a time with a spray bottle then ran paper chalk all along it, combed it through, then ran a flat iron over it to heat-set the pigment. It will stay in a couple of days or until your wash it as long as it is done this way.

Eat Cake

I may just have another favorite white cake recipe. This one has been my go to in the past, but I have been wanting and wanting to make this one I saw on Pinterest a while back.

Last month it happened to be Easy's mom's birthday and I thought it would be a great day to bake a cake and celebrate her and the amazing woman she was.

I didn't do the frosting (too much work!) Instead I went with trusty ole buttercream. Yum!

Snow White Vanilla Birthday Cake from Sweetapolita

Ingredients

1/2 cup butter

2 cups white sugar

3 1/2 cups flour (I used cake flour)

1 teaspoon salt

3 teaspoons baking powder

1 1/2 cups ice water

1 teaspoon vanilla

1/2 teaspoon almond extract

4 egg whites beaten stiff

Method:

Add sugar to the butter and beat until light. Sift dry ingredients and add alternately with ice water and flavourings, beating thoroughly after each addition. Fold in the beaten egg whites. Pour into greased layer pans and bake at 350 degrees for about 30 minutes. Cover with Angel Feather Icing and be tactful about the number of candles.

so are you loving all this neon out there or what??

i'm totally digging it.

1. been looking for an eames rocker at a decent price. there are just sooo many manufacturers out there from cheap to pricey and i'm not sure the best option.

2. pink jeans. thank you ali! these will be awesome for spring.

3. loving this neon necklace.

4. saw these little wings on pinterest the other day. i knew i need to make them. then i thought about how they would be fought over. then i thought i would need to make 4. then i decided to rethink the whole thing over.

5. oh this ring! i la la love it. and not quite as pricey as i thought it would be.

6. i've been converted to the chambray. honestly i was like, denim shirt? coming back? no!! then i got this one and i really do want to wear it everyday.

7. the time has come where my big girls have started wearing out shoes faster then they are growing out of them. so cheap-o ones from walmart and target just aren't cutting it anymore. it was so fun getting GM some hot pink Saucony's this week :)

8. kinda want a new floppy hat for florida.

9. i think i'm going to chalk my hair today.

Quits.

I did it.

I have officially put in my notice at work and will quit my job on March 3.

This last year has been very hard on my little family with a cross-country move, a surprise pregnancy, a new office for Easy, a new career for me, kindergarten, preschool, then finally our new little babe.

I have received excellent training at my hospital and feel like a competent nurse. Still learning and humble, but competent. So we are going to put all that on the back burner for a couple of years as I plan to just focus on my people.

And I won't worry about school, tests, work, side effects, risk factors, being tired, feeling torn, feeling guilty. Not now. I can worry about all that again later.

Because my little chickies need me.

And I need them.

I am soooooo excited! I have so many plans for us.

I think we are pretty ready for Valentines around here. Nothing big, but we love a reason to celebrate having each other and having others we love.

The chickies and I spent yesterday afternoon crafting DumDum Flowers for their classes at school while Easy drove my brother to the airport. Over the last week we had visits from him and my parents both as they were passing through.

It was such a treat to have them.

As for tomorrow I have small gifts or the girls (coloring books) and something equally small for Easy. We will eat Green Enchiladas for dinner and have a treat afterwards.


*the DumDum Flowers were simply made by cutting tissue paper into 2 inch squares and punching a tiny hole in the middle. Then it was pulled up the stem, crunched around the sucker, and tied with yarn.

FL Baby!

Solidifying our rental for Florida today.

I'm so excited to take our family to the beach and just relax for a few days over spring break.

Just us.

We plan to play in the sand, collect beach treasures, eat seafood, watch dolphins, and enjoy the surf.


It's pretty much going to be the best week ever.

Breadsticks with Parmesan Butter

If my daughters ever see that I'm about to work something up in the kitchen they immediately grab the stool, push it over to the counter, and climb up to get their hands dirty.

I usually let them. And they usually make a huge mess. Which I usually clean up. It's a win/lose thing.

They win.
I lose.

There really is nothing like fresh bread baking in the oven. I find it makes me very happy. And I'm pretty sure it makes everyone else happy too. :)

Breadsticks with Parmesan Butter
adapted from here

Ingredients

  • 2 (.25 ounce) packages active dry yeast
  • 1/2 cup sugar, divided (I really don't think it needs this much)
  • 2 cups warm water (110 degrees to 115 degrees), divided
  • 3 tablespoons canola oil
  • 1 egg
  • 1 teaspoon salt
  • 4 1/2 cups all-purpose flour (or bread flour)
  • 1/2 cup butter, softened
  • 2 tablespoons grated Parmesan cheese
  • 1/4 teaspoon garlic powder

Directions

  1. In a large mixing bowl, dissolve yeast and 1 tablespoon sugar in 1 cup warm water. Add the oil, egg, salt, 2 cups flour, and remaining sugar and water. Beat until smooth. Stir in enough remaining flour to form a soft dough. Turn onto a floured surface; knead until smooth and elastic, about 6-8 minutes. Place in a greased bowl, turning once to grease top. Cover and let rise in a warm place until doubled, about 40 minutes.
  2. Punch the dough down. Roll onto a floured surface into a rectangle then get your pizza cutter out and cut dough into strips lengthwise. Lightly run your fingers along each strip one at a time from the middle going out to extend them. Then grab each tip and in one motion swing them together to make a spiral. Lay close together on a cookie sheet or a baking stone . Cover and let rise until doubled, about 25 minutes.
  3. In a small mixing bowl, cream the butter, Parmesan cheese and garlic powder. Lightly brush mixture over raised dough reserving a little. Bake at 400 degrees F for 10-12 minutes or until golden brown. Then brush the remainder of the butter on.
  4. Eat with dinner. Then for breakfast.

Backyard Brew

I'm itching here.

This warm weather has got me thinking about spring. And summer.

It has me thinking about planting, growing, harvesting, and eating fresh veggies from my garden.

Last year in all our craziness I just threw a few plants and herbs out front. They didn't yield much and all through 2011 I dreamed of my Arizona days with our fresh veggies.

I'm determined to get a compost bin built this week so I can a least have something brewing out back when planting time comes. I'm so giddy about it. The plans. The dirt. The work. I can almost taste it.

Va Voom!

So I saw this hair curling tutorial online the other day and thought I would give it a go.

I usually just let my hair air dry, style my bangs, and spray on some sort of wave product to give a boost to what I have naturally.

Let's just say that this was way more time consuming, but dang, I think I really like it.


And I think I'll try this one next.
