Eat Cake

I may just have another favorite white cake recipe. This one has been my go to in the past, but I have been wanting and wanting to make this one I saw on Pinterest a while back.

Last month it happened to be Easy's mom's birthday and I thought it would be a great day to bake a cake and celebrate her and the amazing woman she was.

I didn't do the frosting (too much work!) Instead I went with trusty ole buttercream. Yum!

Snow White Vanilla Birthday Cake from Sweetapolita

Ingredients

1/2 cup butter

2 cups white sugar

3 1/2 cups flour (I used cake flour)

1 teaspoon salt

3 teaspoons baking powder

1 1/2 cups ice water

1 teaspoon vanilla

1/2 teaspoon almond extract

4 egg whites beaten stiff

Method:

Add sugar to the butter and beat until light. Sift dry ingredients and add alternately with ice water and flavourings, beating thoroughly after each addition. Fold in the beaten egg whites. Pour into greased layer pans and bake at 350 degrees for about 30 minutes. Cover with Angel Feather Icing and be tactful about the number of candles.

Easy's mom was amazing and such a beautiful lady. She will never be forgotten by anyone that knew her. What a beautiful cake!
