I'm thinking this was the fourth (or so) time we had soup this week for dinner. First we had chili, then it was a sausage tortellini, then a chicken tortilla soup, and finally this baby. What can I say though? Soup is calling us all, right? Especially with this dramatic change in Arkansas weather where we experienced our first freeze. Nothing warms like a savory soup and trust me this one was amazing!
I had potatoes and sausage to use up, so while hunting around on the internet for the perfect recipe I finally just ended up doing my own thing. So glad I did!
Creamy Rosemary Potato Soup with Sausage by Hays
1/2 yellow onion, chopped 3 celery stalks, sliced 1-2 cloves garlic, minced 3 tbs butter 1/2 lb ground sausage (i happened to have breakfast sausage) 4 or so cups vegetable broth 5-6 red potatoes 1 - 2 c chopped baby carrots 1 c heavy cream 1 c frozen/fresh yellow corn 1 tbs chopped fresh rosemary 1 tsp chopped fresh thyme salt and pepper to taste
Melt butter in large saucepan over med heat. Add celery, onions, and garlic. Once these get to bubbling add the sausage until browned. When the sausage is fully cooked add the broth, potatoes, and carrots. Bring to a boil then let simmer until carrots are tender (30+ min). Add in the cream, corn, and herbs then s/p to your own hearts desire. I think I added about 1tsp salt and 1/2 tsp pepper when all was said and done, but then again I didn't measure at all. :)
Lastly, enjoy with some fresh bread that you prepared ahead of time - or wished you did. :)
Yes the one with the big brown eyes, that loves puppies, is possessive of her parents, and gives the sweetest kisses ever. She cuddles, will listen to book after book be read to her, is especially ticklish on her back, sings at the top of her lungs with arms spread out for all to hear, and adores her big sisters. Yeah, she pretty much gets whatever she wants because we all can't resist her. Happy Birthday Roo!
