Creamy Rosemary Potato Soup with Sausage


I'm thinking this was the fourth (or so) time we had soup this week for dinner. First we had chili, then it was a sausage tortellini, then a chicken tortilla soup, and finally this baby. What can I say though? Soup is calling us all, right? Especially with this dramatic change in Arkansas weather where we experienced our first freeze. Nothing warms like a savory soup and trust me this one was amazing!

I had potatoes and sausage to use up, so while hunting around on the internet for the perfect recipe I finally just ended up doing my own thing. So glad I did!

Creamy Rosemary Potato Soup with Sausage

1/2 yellow onion, chopped
3 celery stalks, sliced
1-2 cloves garlic, minced
3 tbs butter
1/2 lb ground sausage (i happened to have breakfast sausage)
4 or so cups vegetable broth
5-6 red potatoes
1 - 2 c chopped baby carrots
1 c heavy cream

1 c frozen/fresh yellow corn

1 tbs chopped fresh rosemary
1 tsp chopped fresh thyme

salt and pepper to taste

Melt butter in large saucepan over med heat. Add celery, onions, and garlic. Once these get to bubbling add the sausage until browned. When the sausage is fully cooked add the broth, potatoes, and carrots. Bring to a boil then let simmer until carrots are tender (30+ min). Add in the cream, corn, and herbs then s/p to your own hearts desire. I think I added about 1tsp salt and 1/2 tsp pepper when all was said and done, but then again I didn't measure at all. :)

Lastly, enjoy with some fresh bread that you prepared ahead of time - or wished you did. :)

Roo's Two


Sunday was the day of Roo.
A day for her to just be two.


A crown, a cake, and presents all there.


Plus sisters that show her how to unwrap with care.


I don't think she had the slightest clue -
just how great it would be to turn two.

Tomorrow our littlest chickie will be two.


Yes the one with the big brown eyes, that loves puppies, is possessive of her parents, and gives the sweetest kisses ever. She cuddles, will listen to book after book be read to her, is especially ticklish on her back, sings at the top of her lungs with arms spread out for all to hear, and adores her big sisters. Yeah, she pretty much gets whatever she wants because we all can't resist her.

"She's Going to Need a Blankie, Mom."


All of my girls have blankies and bunnies.

The big girls were getting concerned about the sister-in-womb and that she didn't have a new blankie of her very own to snuggle. So a blankie was fashioned after Blondes' lovely lavender one.


We started with one yard of Mother Goose flannel, a yard of yellow minkie, and Satin Blanket Binding - all from Hobby Lobby.

The flannel and minkie were cut to match each other.


Roo acquired the scraps for play.


The layers pinned and sewn together with right-sides out.


Then the binding attached like so. Confession - getting those blasted corners right made me pronounce more than a couple of swear words.


Sewn again.


Almost before the threads were clipped it quickly disappeared into the hands of snugglers - each taking their turn.

I guess now we just need a bunny. :)

hello october.


we have missed you! the girls in the gardiner house are so excited that you are here. we are planning halloween costumes, baking, and deciding when to take a trip to the pumpkin patch.


also, we have been creating works of art that involve witches, goblins, and jack-0-lanterns instead of the the typical princesses and butterflies.


it's a great change and one we welcome whole-heartedly.

plus we all know that this brings us closer and closer to:

3. Blondes 6th Birthday
4. Hay's Maternity Leave from Work
5. Thanksgiving
